Yummy Gazpacho Dip

We participated in Taste of Home a while back with the Recipe for Yummy Gazpacho Dip. There have been many people requesting the Recipe, so here it is.

Ingredients:

  • 3-4 ripe (but not smushy) avocados, chopped
  • 3-4 finely chopped tomatoes
  • 5 green onions, chopped
  • 4 oz. can chopped green chilies
  • 4 oz. can chopped black olives
  • 3 T. olive oil
  • 1/2 T. cider vinegar
  • 1 t. salt
  • 1 t. garlic
  • 1/4 t. pepper

Preparation:

Mix all ingredients together, being careful not to smush avocados.  Chill for 2-3 hours in the fridge and enjoy!
